Anna’s Ham & Cheese Tortellini with Crispy Bacon

Ingredients:

  • 630g Casa Della Pasta Anna’s Ham & Cheese Tortellini
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 50 ml olive oil
  • 160g bacon, cut into lardons or small pieces
  • Salt and pepper to taste
  • Chili flakes, to taste (optional)
  • 50g spring onion, thinly sliced, for garnish
  • Grated mozzarella cheese, for topping
  • Grated Parmesan cheese, for topping

Method:

  1. Place the bacon in a large pan over medium heat and cook until crispy. Remove the crispy bacon from the pan with a slotted spoon and set aside, leaving the rendered fat in the pan.
  2. Add the finely chopped onion to the pan with the bacon fat (add a little olive oil if needed). Cook over medium heat until softened and translucent, about 5 minutes.
  3. Add the minced garlic to the pan and cook for another minute until fragrant, being careful not to burn it.
  4. Season the onion and garlic mixture with salt, pepper, and chili flakes (if using).
  5. While the sauce is cooking, prepare the Casa Della Pasta’s Anna’s Ham and Cheese Tortellini according to the packet instructions.
  6. Once Anna’s tortellini is cooked, drain it and add it directly to the pan with the onion and garlic sauce. Toss gently to coat the tortellini.
  7. Divide Anna’s tortellini and sauce among serving bowls.
  8. Sprinkle the crispy bacon over the top of each serving.
  9. Garnish with sliced spring onions, grated mozzarella cheese, and grated Parmesan cheese. Serve immediately.
  10. Drizzle with Olive Oil.
