Anna’s Ham & Cheese Tortellini with Crispy Bacon

Ingredients:
- 630g Casa Della Pasta Anna’s Ham & Cheese Tortellini
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 50 ml olive oil
- 160g bacon, cut into lardons or small pieces
- Salt and pepper to taste
- Chili flakes, to taste (optional)
- 50g spring onion, thinly sliced, for garnish
- Grated mozzarella cheese, for topping
- Grated Parmesan cheese, for topping
Method:
- Place the bacon in a large pan over medium heat and cook until crispy. Remove the crispy bacon from the pan with a slotted spoon and set aside, leaving the rendered fat in the pan.
- Add the finely chopped onion to the pan with the bacon fat (add a little olive oil if needed). Cook over medium heat until softened and translucent, about 5 minutes.
- Add the minced garlic to the pan and cook for another minute until fragrant, being careful not to burn it.
- Season the onion and garlic mixture with salt, pepper, and chili flakes (if using).
- While the sauce is cooking, prepare the Casa Della Pasta’s Anna’s Ham and Cheese Tortellini according to the packet instructions.
- Once Anna’s tortellini is cooked, drain it and add it directly to the pan with the onion and garlic sauce. Toss gently to coat the tortellini.
- Divide Anna’s tortellini and sauce among serving bowls.
- Sprinkle the crispy bacon over the top of each serving.
- Garnish with sliced spring onions, grated mozzarella cheese, and grated Parmesan cheese. Serve immediately.
- Drizzle with Olive Oil.
